These are your water-boiled dumplings. They stuff ‘em with pork, chives, prawns, shitake mushrooms and much more. Full disclosure, they make it very difficult to say no.

XIAO LONG BAO
Your typical dumpling associated with Shanghainese cuisine and one that will knock you off your feet, in a good way. Each dumpling is stuffed with pork then they add a crazy delicious soup.

GUO TIE
Pot-stickers. Yes, these are the pan-fried dumplings we all love as the somewhat guilty pleasure. They are often pork-based with fresh vegetables.

WONTONS
The most popular of all the dumplings, wontons can be boiled or deep fried, served in soup, with noodles, or in spicy sauce. And can be stuffed with shrimp, pork, and vegetables.

MANDU
These versatile Korean dumplings are normally served with kimchi. Mostly filled with minced meat and assorted vegetables, they can be served boiled, steamed and pan-fried.

GYOZA
Introduced to Japan during World War II, gyoza are typically pan-fried with pork or seafood filling and dipped in the dark waters of soy sauce. Warning, you probably can’t stop at one.

HAR GOW
This dumpling is filled with shrimp then delicately wrapped in a tapioca starch pastry. Learn it. Love it. Pop a half dozen in your mouth.

SIU MAI
It might look like a moneybag, but this thin, yellow wrapped dumpling is stuffed with pork, shrimp and topped with salmon roe or sometimes whole prawn. Nothing wrong with either of those, is there?

JIAN DUI
Craving something sweet? This Chinese glutinous rice flour pastry is coated in sesame seeds with a delightful filling of lotus, or red bean paste. It’s a crispy chewy delicacy.

HAM SIU GOK
These Cantonese egg-sized pork croquettes have a tender-crisp crust and inside you find a deliciously magical minced pork core. Think of this like striking oil of the pork variety.

WU GOK
Meet the Taro dumpling. It’s made with steamed and mashed taro, and then stuffed with diced mushrooms, shrimp, pork and scallions. And yes, it is perfectly crusty outside and features a soft delicious inside.

CHIU CHOW FUN GOR
This dumpling is filled with chopped peanuts, garlic chive, ground pork, dried radish and shitake mushrooms. It’s encased in a thick dumpling wrapper made from a mixture of flours.
