The countdown is on to the first ever Richmond World Festival this weekend that’s going to feature headliners Matt & Kim (fresh off Pemberton Music Festival), and, of particular interest to our hungry readers: an international smorgasbord of 35 food trucks and a culinary stage.

A lineup of acclaimed chefs will be hitting the Richmond Centre Culinary Stage with demonstrations and chef tips all throughout the one-day, FREE festival on Saturday, Sept. 5—including MasterChef Canada‘s Tammy Wood.

As a special treat to 365 readers, Chef Tammy is going to show us how to make something that will impress all of your friends.

Recipe: Phyllo Moroccan Bison Cigars




  • 2 cups of Bison, ground
  • 1 tablespoon cumin seed
  • 1 tablespoon coriander
  • 1 large onion, diced
  • 1 teaspoon cinnamon
  • 2 carrots, diced
  • ½ teaspoon nutmeg
  • 1 cup of raisins
  • 1 teaspoon of salt and coarse pepper
  • 1 cup chopped bamboo shoots
  • 1 teaspoon fennel seed
  • ½ cup of water
  • 3 teaspoons of garlic, diced or pressed
  • 1 egg yolk with water added for a wash


Oil pan with olive oil. Add fennel and cumin seeds. Stir on high heat till they begin to pop. Add onion and stir until clear. Add carrots, raisins, and bamboo shoots. Once the carrots are soft but still have a crunch, scrape into a bowl and set aside.

Brown bison. Add garlic, salt, pepper, cinnamon, nutmeg, coriander and some olive oil. When well cooked, and blended well, stir in vegetable mixture. Add salt and pepper to taste, or any other spices your palate may want more of. Add ½ cup of water for a bit of gravy.

Cut phyllo into 3×5 rectangles. Arrange a teaspoon of filling into a log shape and 3 inches long. Brush egg wash on Phyllo. Roll to cover filling, fold in sides and continue to roll until completely covered.

Place your cigars on parchment paper, brush with egg wash, and sprinkle with a few brown mustard seeds.

Bake at 350 F for 20-25 minutes or until lightly browned.
